Deep-Fried Cheese Balls
Crispy on the outside and soft, melty inside, these deep-fried cheese balls are a quick appetizer made from simple ingredients. Serve them hot with sweet-and-sour, cheese, berry or tomato sauce.

Preparation
Step 1
Prepare the ingredients. Use any cheese that melts well, such as low-moisture mozzarella for pizza, Gouda or another simple semi-hard fermented cheese.

Finely grate the cheese and place it in a bowl.

Add the eggs and pressed garlic to the cheese. Season with salt to taste and mix well.
Step 4
Add the flour and mix thoroughly. The mixture should be thick and hold its shape rather than spread. Add a little more flour if necessary.
Step 5
With slightly damp hands, shape the cheese mixture into smooth balls about the size of a walnut. Coat them thoroughly in breadcrumbs. Coarser breadcrumbs work especially well for a crisp coating. If using plain pale breadcrumbs, you can season them with paprika, turmeric, salt and ground pepper to taste.
Step 6
Heat enough vegetable oil in a deep saucepan over medium heat to completely submerge the balls. To check the temperature, dip a wooden skewer into the oil; small bubbles should form around it. Fry the cheese balls until golden. Once cooked, they will usually rise toward the surface.
Step 7
Transfer the fried cheese balls to paper towels to absorb excess oil.

Garnish with fresh herbs if desired and serve immediately while the cheese is still warm and stretchy. Serve with your favorite dipping sauces.
