Preparation
Step 1
According to the original recipe, the balls are cooked in clarified butter, but neutral vegetable oil will also work. Pour it into a small saucepan and place it over the heat so it gets hot enough. While we make the batter, the oil will be ready.
Step 2
Crack the egg into a bowl, add the salt, sugar, yogurt or kefir, and mix with a spoon. Add the flour in 2 additions. It is better to sift the flour through a sieve so it becomes aerated. Mix the batter, then add 1/2 teaspoon of cinnamon at the end. If you do not like cinnamon, you can add vanilla sugar instead. Add 1/2 teaspoon of baking soda. To keep it from being noticeable in the batter, extinguish it with lemon juice, then mix everything once more. The batter should have the consistency of thick sour cream.
Step 3
Take 2–3 bananas, peel them, and cut them into pieces about 1.5 cm / about 1/2 inch thick.
Step 4
Prick the banana pieces with a fork, dip them into the batter, and lower them into the hot oil. They fry very quickly, in 10–15 seconds, so watch carefully so they do not burn. Turn them over, fry the other side just as quickly, and remove them to a plate lined with a paper towel so the excess oil can drain.
Step 5
Blot the tops of the banana balls with a paper towel as well to remove extra oil. Add the next batch to the saucepan. By the time the kettle boils, the treat is already ready. The banana melts from the high heat, becomes tender, and tastes as if you are eating something delicious with cream. Enjoy!
