Preparation
Step 1
Clean the mushrooms (I use champignons, but forest mushrooms work too). Wash them, peel if needed, and trim any dried stem ends. Wash, dry, and peel all vegetables.
Step 2
Cut peeled potatoes into medium pieces and start boiling them in a pot of water until half-cooked.
Step 3
Chop the peeled onion finely and place it in a skillet with preheated vegetable oil. Stir until the onion becomes translucent.
Step 4
Slice the mushrooms and add them to the onion in the skillet. Stir and sauté together for about 4-7 minutes, depending on your stove and pan. Avoid burning. Remove a few mushroom slices and set them aside for garnishing the soup.
Step 5
Add wheat flour to the mushrooms, stir, and fry briefly.
Step 6
Transfer the mushrooms, onions, and flour into the pot with the potatoes. Cook for another 5-10 minutes.
Step 7
Cut processed cheese into cubes. You can use any unsweetened cheese, even with herbs or bacon bits.
Step 8
Pour heated cream and the diced processed cheese into the pot with the soup. Salt to taste. Add finely grated garlic. Stir and bring to a boil. Let the soup simmer for about 1 more minute. If the potatoes are soft, turn off the heat. Leave the soup to cool slightly in the pot.
Step 9
Take a round rye bread loaf and cut off the top. Remove the soft bread inside, leaving walls of moderate thickness. You should have a bread bowl.
Step 10
Once the soup has cooled slightly, blend it with an immersion blender until smooth. Pour the mushroom cream soup into the bread bowl and garnish with the reserved fried mushroom slices.
