Cutlets with Eggplant and Minced Meat

Preparation
Step 1
First, prepare all the necessary ingredients and spices for making perfect cutlets from an eggplant-meat mixture with herbs.
Step 2
To make the mixed filling, cut 250 g (about 9 oz) of young eggplants and one onion into small pieces. Place them in a blender bowl, add two cloves of garlic, and blend until smooth.
Step 3
Put 500 g (about 1.1 lb) of mixed ground meat into a large bowl, then add the prepared eggplant mixture.
Step 4
Add ½ teaspoon of khmeli-suneli, ⅓ teaspoon of coriander, ⅓ teaspoon of cumin, salt to taste, a mix of black and red peppers, and one egg.
Step 5
Add finely chopped cilantro and dill to taste.
Step 6
Mix all ingredients thoroughly, then let the mixture rest for about 20 minutes.
Step 7
Take a portion of the prepared mixture, pat and shape it in your hands for 1-2 minutes to form cutlets.

Roll each cutlet in breadcrumbs mixed with a little flour.
Step 9
Heat vegetable oil in a skillet over high heat (about 375°F / 190°C). Fry the cutlets on both sides until golden brown.
Step 10
Place a few tomato slices on top of the cutlets, cover the skillet with a lid, and cook over low heat for 15 minutes.

Transfer the cooked cutlets to serving plates and serve hot.
