Cutlets Like in a School Cafeteria
Fluffy, appetizing, perfect for lunch or dinner for the whole family! School-style cutlets, like those from the cafeteria, are often remembered with nostalgia and are easy to make at home. They turn out tender and airy, with a crispy top. The secret is that a lot of bread is added to the mince, making the cutlets soft and light.

About 20 min.
Preparation
Step 1
It’s best to use a mix of ground beef and pork - that way, the cutlets will be juicier. Use slightly stale white bread from the previous day.
Step 2
Break the bread into pieces and soak it in milk. Once it softens and absorbs the milk, mash it with your hands, a spoon, or a blender into a smooth mixture. Combine it with the ground meat and mix well. Peel and finely chop the onion (you can use a knife, grater, or food processor). Add the onion, salt, and ground black pepper to the mince. Mix thoroughly to evenly distribute the seasonings.
Step 3
Do not add eggs - traditional school cutlets don’t need them. The milk-soaked bread acts as a binder, keeping the patties from falling apart when cooked. Shape the cutlets by hand (wet your hands in cold water) into round or oval forms. Dredge each cutlet in flour on all sides.
Step 4
Place the cutlets on a greased baking sheet and bake for about 25 minutes at 355°F (180°C) until golden brown. They’ll turn fluffy and light. Thanks to this cooking method, the cutlets are not only tasty but also healthy - perfect for kids. Enjoy your meal!
