Preparation
Step 1
Use a 200 ml cup for measurements. If you don’t want to weigh the butter, measure a little less than half a cup of melted butter. You can substitute butter with margarine and baking soda with baking powder. Any fat percentage of kefir will work.

In a deep bowl, crack the eggs. Always wash eggs before use, as harmful bacteria may be present on the shell. It's best to use food-safe detergent and a brush. Add kefir, then sugar and semolina. Mix everything with a whisk and let it sit for 20-30 minutes so the semolina can absorb the liquid and swell.

While the semolina is soaking, melt the butter and then let it cool.

Pour the melted butter and vegetable oil into the soaked mixture. Sift the flour and mix it with the baking soda, then add it to the batter. Sifting the flour is important because it aerates it, making the cake light and fluffy.

Mix the batter with a whisk until fully combined. The consistency should be thick but pourable. If it turns out too dense (which depends on the kefir’s thickness, egg size, and flour properties), dilute it with more kefir.

Choose a suitable baking pan. Grease it lightly with vegetable oil and sprinkle with semolina—this will create a crispy crust and prevent sticking. If using a silicone mold, greasing is unnecessary. Pour the batter into the pan and smooth the top.

Bake the cake in a preheated oven at 180°C (350°F) for 40-50 minutes. The exact baking time depends on your oven and the size of the cake. Check for doneness with a wooden skewer—it should come out dry from the center. The top of the cake will be golden brown. Remove from the oven, let it cool, and take it out of the mold.
