Cucumber, Tomato & Carrot Salad

The simplest to make and from accessible ingredients! The cucumber, tomato, and carrot salad is tasty on its own, but soy sauce and olive oil make the vegetables richer and brighter in flavor. A sea of vitamins on your plate - definitely try it!

Preparation
Step 1
For extra color I used red onion.
Step 2
Peel the onion and carrot. Halve the bell pepper and remove core and seeds. Remove tomato stems. Rinse all vegetables in cold clean water and pat dry with paper towels.
Step 3
Slice tomatoes into thin wedges or medium cubes (cut all vegetables however you like). Put the tomatoes into a deep salad bowl.
Step 4
If needed, peel the cucumber. Cut into medium pieces and add to the tomatoes.
Step 5
Shred the bell pepper into thin strips or small cubes and add to the bowl.
Step 6
Julienne the carrot on a Korean-style slicer, or use a coarse grater. Add the carrot to the bowl.
Step 7
Slice the onion into thin half-rings or feathers and add it.
Step 8
Rinse, dry, and finely chop the herbs. Add to the vegetables. Parsley, dill, young green onion, or basil work well; you can mix several. Drizzle with olive oil and soy sauce.
Step 9
Toss thoroughly and taste. Add black pepper and salt if needed (remember the soy sauce is salty). Toss again.
Step 10
Serve immediately after preparing!
