Cucumber, Tomato, and Green Pea Salad

Bright, summery, full of vitamins, and incredibly healthy! Cucumber, Tomato, and Green Pea Salad is a perfect snack for hot summer days. It also complements any hot main course. Serve as a light dinner.

Preparation
Step 1
I used canned peas, but you can use fresh young peas. They will complement the other vegetables just as well.
Step 2
Drain liquid from the peas. Peel the carrot and onion. Wash and dry the lettuce leaves. Suitable leaves include romaine, iceberg, lollo-rosso, frisée, corn, etc. Rinse cucumbers and tomatoes. Remove rough cucumber skin if necessary.
Step 3
Tear lettuce leaves into small pieces and place in a large salad bowl.
Step 4
Dice tomatoes and cucumbers into medium-sized cubes. Thin slices are also acceptable. Add to the lettuce.
Step 5
Grate the carrot with a coarse grater. Chop the onion as desired. Add both to the bowl.
Step 6
Add green peas and finely chopped herbs. Suitable herbs include parsley, dill, young green onion, or basil.
Step 7
Season with salt, optionally add black and red pepper. Drizzle with vegetable or olive oil.
Step 8
Mix thoroughly and refrigerate for 10-15 minutes to chill.
Step 9
Before serving, mix again, garnish with a sprig of fresh basil, parsley, or dill, and serve.
