Preparation
Step 1
Take 2 medium cucumbers, 3 small ones, or 1 large cucumber. Choose good quality, natural sour cream without vegetable fats. Fat content can vary - it only affects the sauce’s thickness and calories. Use garlic according to taste; 1 clove is fine.
Step 2
Wash cucumbers well and cut off the ends. Taste them to make sure they aren’t bitter, as bitter cucumbers spoil the flavor. If very ripe with large seeds, peel and scoop out the seeds. Grate the cucumbers on a medium grater - not coarse, to keep the sauce smooth.
Step 3
Place grated cucumbers in a bowl and squeeze out excess liquid. Peel and crush the garlic into the cucumbers. You can also finely grate it if no garlic press is available. Salt and pepper to taste, then mix. Optionally, add finely chopped herbs like dill, parsley, or cilantro according to preference.
Step 4
Add sour cream to the bowl and mix well until smooth. Taste and adjust salt and pepper if needed.
Step 5
Transfer the sauce to a serving dish, garnish with cucumber slices and herbs. Serve with meat, chicken, cutlets, boiled potatoes, or use it for Greek-style shawarma. Enjoy!
