Cucumber Appetizer

Beautiful, festive, and easy to prepare! The cucumber appetizer will adorn any table despite its simplicity. Without mayonnaise, it’s light, and the bright accents of caviar, tomatoes, and fish make it very festive.

Preparation
Step 1
Prefer smooth, long cucumbers, but regular ones are fine too. The filling amount depends on cucumber length and the number of pieces.
Step 2
For the caviar version, wash and dry cucumbers; cut off ends and slice into equal pieces about 6 cm long. Use a cut piece as a measure for uniformity.
Step 3
Cut the cylinders diagonally in half, leaving ~1 cm from both edges.
Step 4
Carefully remove the seeds from the angled side of each piece using a teaspoon.
Step 5
Place cream cheese in a piping bag with a decorative tip. Pipe roses into the hollowed areas. You may add chopped herbs, avocado, garlic, or spices. Top with a few caviar eggs and a dill sprig.
Step 6
For another version, peel thin strips from the cucumber to make it striped.
Step 7
Cut striped cucumbers into portion pieces, some thick, some thin.
Step 8
Remove seeds from thick pieces with a spoon.
Step 9
Pipe cream cheese on top of all pieces.
Step 10
Decorate some cucumbers with sliced tomatoes and fresh herb leaves.
Step 11
Slice red fish thinly, roll into roses, place on the cheese, and add herb sprigs.
Step 12
Serve the appetizer. Can be made ahead; cucumbers hold well and do not release liquid. Enjoy!
