Step 1
How do you make cucumber and olive salad? Prepare all the necessary ingredients. Wash the lettuce leaves under running water, checking all the folds carefully, as dirt and small insects are often hidden there. Shake off the excess moisture and tear the lettuce leaves by hand, or cut them with a knife. I do not use the tough white part in the middle of the lettuce leaf, which makes the salad more delicate. Transfer the lettuce leaves to a salad bowl.
Step 2
Wash the cucumbers under running water and dry them. If you are using young cucumbers, you do not need to peel them. Cut the cucumbers into thin half-rings.
Step 3
Wash the green onion and parsley under running water and dry them. Finely chop the herbs. Instead of green onion and parsley, you can use any other herbs, for example cilantro or dill work very well here. Fresh herbs will give this light salad new flavor notes and a wonderful aroma.
Step 4
Drain the liquid from the jar of olives, you will not need it. Cut the olives into rings. It is better to choose pitted olives right away, because they are easier to work with. Olives stuffed with anchovies, lemon, or sweet red pepper are also available. If you choose a non-classic version, then in my opinion the lemon-filled olives work best here, so you can experiment.
Step 5
For the dressing, mix olive oil, you may use any other oil if you wish, finely grated garlic, and just a little lemon or lime juice. Whether to choose lime or lemon is entirely up to you. Lime is more aromatic, while lemon is more familiar. Dress the salad with the prepared dressing, then add salt and pepper to taste. Serve this salad immediately.
