Cucumber and mint raita

A cool and refreshing cucumber raita, perfect as a side dish for spicy curries or as a creamy dip for poppadoms. Simple to make and full of fresh flavour.

Preparation
Step 1
FInely chop mint leaves. De-seed and chop the chilli.
Step 2
Grate the cucumber in a bowl.
Step 3
Wrap the grated cucumber in a clean tea towel and squeeze firmly to remove any excess moisture.
Step 4
Once drained, combine the cucumber with the remaining ingredients in a mixing bowl, stirring until everything is evenly blended.
Step 5
Chill the raita before serving, and enjoy it as a cooling accompaniment to curries or a delicious dip for poppadoms.
