Preparation
Step 1
For the filling, you can use any jam, as long as it’s thick. I used blackcurrant jam. Sift the flour through a sieve beforehand.
Step 2
For the dough, take a large mixing bowl. Combine flour and rolled oats. Add a pinch of salt and vanilla sugar (or vanilla powder).
Step 3
Then add both types of sugar. If you don’t have brown sugar, simply use more white sugar instead. Mix all dry ingredients together.
Step 4
Melt the butter - you can do this in the microwave or in a double boiler. Pour the melted butter into the bowl with the dry ingredients.

Mix everything until the dough turns into crumbs.
Step 6
Use an 7-8 inch (18-20 cm) baking pan. Line the bottom with parchment paper. Divide the dough into two unequal parts. Spread the larger portion evenly over the bottom of the pan, pressing lightly and forming small edges along the sides.

Spread your chosen jam over the dough. Smooth it out evenly.

Sprinkle the remaining dough crumbs over the top. Press down slightly so it holds together. Place the pie in a preheated oven at 350°F (180°C) for 25-30 minutes. Adjust time based on your oven.

The finished pie should be lightly golden. Remove the pan from the oven.

Take the pie out of the pan, let it cool, slice into pieces, and serve with tea. Enjoy!
