Advice
Be prepared to use more or less flour than listed. Focus on achieving the desired dough consistency, not the exact amount.
Preparation
Step 1
Start by preparing the dough. It comes together quickly. Use high-quality all-purpose flour. Butter can be cold or room temperature - either works. Adjust sugar to taste.
Step 2
In a bowl, combine flour, sugar, and chopped butter (I used it straight from the fridge). Rub everything together by hand until it resembles fine crumbs. To speed things up, use a blender. Chill the crumb mixture to keep it crumbly.
Step 3
Now prepare the filling. Adjust sugar depending on how sweet your apples are. If they're sweet, use less sugar.
Step 4
Peel and core the apples, then cut into small cubes. To prevent browning, sprinkle them with lemon juice. I soak chopped apples in cold lemon water as I go. Choose tart-sweet, juicy apples like Granny Smith or similar green varieties for the best flavor and color.
Step 5
Heat a pan over low heat and melt some butter. Add chopped apples and sugar. You can add ground cinnamon if desired. Sauté for about 10 minutes. Apples should soften but retain their shape.
Step 6
In a 20 cm (8-inch) springform pan or baking ring, add half of the crumb mixture and spread evenly.
Step 7
Distribute the stewed apples evenly on top.
Step 8
Sprinkle the remaining crumb mixture over the apples and level it gently.
Step 9
Bake the pie in a preheated oven at 200°C (390°F) for 30-35 minutes, or until golden brown. Baking time may vary by oven.
Step 10
Once baked, transfer the pie to a plate, slice into portions, and serve. Enjoy!
