Crispy smashed potatoes

Crispy, golden smashed potatoes cooked with garlic and thyme for the perfect balance of soft, fluffy insides and crunchy edges. An easy side dish ready in just 25 minutes!

Preparation
Step 1
Use small potatoes, best to use are young ones. Do not peel garlic cloves, just smash them with the side of a knife.
Step 2
Put the potatoes in a microwave-safe bowl and prick each one with a fork. Microwave on high for 10 minutes, stirring halfway through to ensure even cooking.
Step 3
Meanwhile, heat 2 tablespoons of oil in a large, heavy-based frying pan over a medium–high heat. Arrange the microwaved potatoes in a single layer in the pan. Using the tines of a fork, gently squash each potato until flattened and starting to break apart.
Step 4
Add the garlic and thyme, if using, and drizzle over another tablespoon of oil. Let the potatoes cook undisturbed for 5 minutes so they begin to form a crisp, golden crust.
Step 5
Carefully flip the potatoes over and drizzle the remaining oil into the pan, allowing it to seep into the gaps between them. Continue to cook for another 5 minutes, then turn the potatoes again and cook for an additional 5 minutes to crisp up all sides evenly.
Step 6
Once beautifully golden and crunchy, sprinkle generously with salt flakes and serve immediately for the best texture and flavour.
