Crispy parmesan chicken

Preparation
Step 1
Place the chicken breasts between two sheets of cling film and gently flatten them until they are about 0.5-1 cm (¼-½ inch) thick. Season well with salt and freshly ground black pepper, then dust with flour, shaking off any excess.

In a shallow bowl, mix the breadcrumbs and grated Parmesan until well combined. Dip each flattened chicken breast into the beaten egg, then coat thoroughly in the Parmesan breadcrumb mixture.
Step 3
Heat olive oil and butter in a large frying pan over medium heat. When the mixture starts to sizzle, add the coated chicken escalopes. Cook for 3-4 minutes on each side, or until golden brown and crispy.

Serve the hot, crispy escalopes on a warm plate with your choice of vegetables for a simple and satisfying meal.
