Step 1
How do you knead crispy chebureki dough with sparkling mineral water? Prepare the necessary ingredients. Place the mineral water in the refrigerator 1 hour in advance. Even better, after chilling it, put the water in the freezer for a short time. The water should be highly carbonated. These factors are the key to a crispy, airy, thin crust.
Step 2
Beat the egg with the sugar and salt using a mixer. Then begin pouring the very cold sparkling mineral water into the egg in a thin stream, continuing to beat the mixture with the mixer until a fluffy foam forms. Pour in the vegetable oil and beat for another couple of minutes.
Step 3
Sift the wheat flour into a clean deep bowl. Make a well in the center and pour in the fluffy beaten mixture.
Step 4
Knead the dough first with a spoon, then with your hands until it comes together into one ball. Dust the work surface with flour, place the dough on it, and continue kneading by hand for another 7–10 minutes, until it becomes elastic and soft. The dough must not stick to your hands under any circumstances; otherwise, the chebureki may come apart when shaped. Place the prepared dough in a plastic bag and refrigerate for 1 hour.

After 1 hour, roll the finished dough into circles, place your favorite filling on them, shape the chebureki, and fry them in plenty of oil. Enjoy!
