Crepes with ham and cheese
Simple, classic savoury pancakes made from a smooth batter and served warm with melted cheese and ham - quick to cook and perfect for brunch or lunch.

Preparation
Step 1
Sift the flour into a large bowl and make a well in the centre. Crack the eggs into the well, then beat them with a fork while gradually drawing in the flour from the edges.
Step 2
Slowly pour in the milk while whisking until the batter is completely smooth with no lumps. Stir in the melted butter, cover the bowl with a cloth, and refrigerate for 15 minutes.
Step 3
Heat 1 teaspoon of oil in a frying pan over medium heat and add a small knob of butter. Once melted, ladle 1-2 scoops of batter into the pan and swirl gently so it coats the base. Cook for 1-2 minutes on each side, until golden brown. Repeat with the remaining batter, adding a little oil as needed.
Step 4
To serve, place a pancake on a plate, sprinkle with cheese and ham, roll it up while still warm to melt the cheese slightly, and serve immediately.
