Creamy tuna one-pot pasta

- teaspoon - 5 ml

- tablespoon - 20 ml

Preparation
Step 1
Heat the oil in a large, deep saucepan over medium-high heat. Add the onion and fry for 3-4 minutes, or until it begins to soften. Stir in the garlic and cook gently for another 1 minute, then sprinkle in the oregano.
Step 2
Add the dried pasta directly to the pan and stir it through the onion and garlic mixture until evenly coated. Pour in the vegetable broth and bring everything to a gentle simmer. Cook the pasta according to the packet instructions - about 8 minutes - stirring halfway through. Place a lid on the pan for the remaining cooking time to help the pasta cook evenly.
Step 3
Once the pasta is tender, reduce the heat to low and stir in the mascarpone along with half the chopped parsley. Add the capers, lemon zest, and lemon juice, stirring until combined.
Step 4
Gently fold in the tuna, keeping the chunks as intact as possible. Season with salt and freshly ground black pepper to taste.
Step 5
Divide the pasta between four bowls and finish with a sprinkle of the remaining parsley before serving.
