Creamy Rice Porridge with Milk

Step 1
Use round rice – it cooks better and gives the porridge a creamy texture. Avoid parboiled types as they stay firm. You can adjust sugar and salt to taste. Any milk fat percentage works.
Step 2
Pour the rice into a saucepan with a thick bottom. Rinse it several times in cool water, but not too long — the starch helps make it creamy. You can also use a regular pot.
Step 3
Pour in the milk. For a liquid consistency, use a 1:5 ratio — 1 cup of rice to 5 cups (1.2 liters) of liquid. You can replace part of the milk with water. Add sugar and salt to the pot.
Step 4
Place the saucepan over medium heat and bring to a boil. Stir a few times to prevent the rice from sticking. Once it starts boiling, reduce the heat to low, cover with a lid, and simmer for 15–20 minutes.
Step 5
Stir occasionally and monitor to prevent boiling over. Cook until the rice is soft and has the consistency you like. Turn off the heat, leave it covered for 15 minutes to finish cooking. Add a knob of butter at the end and stir.
Step 6
Serve warm. Enjoy!
