Creamy pumpkin and lime soup

Creamy and comforting butternut squash soup with a hint of lime, perfect as a warming starter or light meal.

Preparation
Step 1
Heat the olive oil and butter in a large saucepan over medium heat. Add the chopped onion, cover, and cook gently for 3-4 minutes until softened.
Step 2
Stir in the cubed butternut squash and continue cooking for 2-3 minutes, seasoning with salt and freshly ground black pepper.
Step 3
Add the vegetable stock cubes, 750ml water, and the milk, then bring the mixture to a boil. Reduce the heat and simmer for six minutes, or until the squash is tender.
Step 4
Transfer the soup to a blender and pulse until smooth. Taste and adjust the seasoning with more salt and pepper if needed, then finish with a splash of lime juice.
