Preparation
Step 1
First, prepare all the necessary ingredients and spices for making homemade vegetable cream soup for lunch or dinner.

Take a suitable pot and place it on the stove. Pour in 2 tablespoons of vegetable oil and heat it. Then add one finely chopped onion and sauté on high heat until translucent.

Grate one carrot using a coarse grater, add it to the pot with the onion, and sauté while stirring.

Cut 1.5 pounds (about 700 g) of peeled potatoes into large pieces, add them to the pot, stir vegetables together, and heat for about 5 minutes.

Chop half a bell pepper and one celery stalk into small pieces. Add them to the pot for flavor, stir the vegetables, and continue frying over high heat.

Pour 1 2/3 cups (400 ml) of boiling water into the pot, cover with a lid, and bring vegetables to a boil.

Once boiling, reduce the heat to low, cover the pot, and simmer for 20 minutes.

To make croutons: cut about 5.5 oz (160 g) of white bread, removing the crust, into small cubes.

Heat a skillet over medium-high heat, add 1 tablespoon vegetable oil and 1 oz (30 g) butter. Add one finely chopped clove of garlic and sauté briefly.

Add bread cubes to the skillet with garlic and fry while stirring until golden brown on all sides.

Transfer the prepared garlic croutons to a plate.

Season the vegetables in the pot with salt, a mix of ground peppers, ¼ teaspoon ground nutmeg, and 1 teaspoon dried herbs.

Use an immersion blender to puree the vegetables into a smooth, creamy consistency.

Pour ⅓ cup (100 ml) cream into the pot with the soup, stir, bring to a boil, then remove from heat.
