Preparation
Step 1
Chicken fillet was used for this soup, but other parts like thighs, drumsticks, or wings work too. Cream can have any fat percentage; higher fat gives higher calories. I used 20% cream.
Step 2
Wash the chicken fillet. Place it in a pot with boiling salted water. Cook, skimming foam, for about 20 minutes until done. Bone-in chicken needs 5-7 minutes longer.
Step 3
While the chicken cooks, prepare the vegetables. Wash, peel, and cut potatoes into medium cubes.
Step 4
Peel and cut carrots into small cubes or grate them, as preferred.
Step 5
Chop the onion into small cubes.
Step 6
Wash, dry, and finely chop parsley. Optionally, substitute or add other herbs like dill, green onions, cilantro, or a mix of herbs.
Step 7
Remove cooked chicken from broth and cut into small pieces. For bone-in meat, remove bones and cut into pieces.

Add chopped potatoes to the pot. Cook over medium heat, stirring occasionally, for 15 minutes.
Step 9
In a skillet, melt butter over medium heat. Add onion and carrot and sauté for 5-6 minutes. Optionally, skip sautéing and add vegetables directly to the pot. Add a piece of butter along with cream at the end of cooking.
Step 10
Add sautéed vegetables and chopped chicken to the pot. Bring to a boil while stirring, then reduce heat to low.
Step 11
Slowly pour in the cream while stirring constantly and bring soup to a boil again.
Step 12
Finally, add chopped herbs and stir.
Step 13
Remove the pot from heat, cover, and let the soup sit for 15 minutes.

Serve the soup in bowls immediately. Enjoy!
