Creamy Cheese Pasta in a Skillet

Super simple – the fastest dinner for the whole family! Creamy Cheese Pasta in a Skillet is similar to the well-known carbonara, but made without bacon. The creamy cheese sauce coats each piece of pasta, making the dish juicy and hearty.

Preparation
Step 1
You can use pasta of any shape – the important thing is to choose durum wheat pasta, as it holds its shape, tastes better, and is healthier. Use heavy cream with 10–20% fat. Higher fat content will make the dish too rich. Use your preferred spices and seasonings.
Step 2
Place a large pot of cold water over high heat for cooking the pasta. Use plenty of water — about 1 quart (4 cups) per 3.5 oz (100 g) of pasta. Once the water boils rapidly, add salt and a tablespoon of vegetable oil to prevent sticking. Drop in the pasta and stir immediately to avoid sticking to the bottom. Cook according to the time listed on the package. Stir occasionally, then drain through a colander.
Step 3
While the pasta cooks, make the cream sauce. Place a skillet over low heat and pour in the cream. Add salt and spices (nutmeg, ground black pepper, basil, or to your taste). Stir to combine.
Step 4
While the cream is heating, grate the cheese using a medium or fine grater.
Step 5
As soon as the cream starts to bubble, add the grated cheese. Stir quickly and turn off the heat. The cheese will melt from the heat of the cream without further cooking.
Step 6
Add the drained pasta into the sauce and stir to coat evenly. Serve immediately.
Step 7
Optionally, top the pasta with freshly chopped herbs to taste. Enjoy your meal!
