Creamy cauliflower soup

Preparation
Step 1
For the cauliflower soup, warm the oil in a large, heavy-based pan over medium heat.

Add the onion and garlic and cook for 2-3 minutes, until just softened.

Stir in the ground cumin and ground coriander, frying for another 1-2 minutes until aromatic.
Step 4
Add the cauliflower and chicken stock, bringing the mixture to a boil. Reduce the heat and simmer for 8-12 minutes, or until the cauliflower is tender. Remove from the heat and let it cool slightly.
Step 5
Transfer the mixture to a food processor and blend until smooth, or use a stick blender directly in the pan.
Step 6
Return the puréed soup to the pan, stir in the cream, and season with salt and freshly ground black pepper. Warm through gently for 1-2 minutes.
