Creamy broccoli soup

A simple and comforting broccoli soup recipe, simmered with garlic and stock, blended until smooth, and finished with a touch of cream.

Preparation
Step 1
Heat the oil in a saucepan over medium heat and sauté the crushed garlic for 1-2 minutes until fragrant.

Pour in the chicken or vegetable stock, then add the broccoli florets. Bring the mixture to the boil, reduce the heat, and let it simmer gently for 10-12 minutes, or until the broccoli is tender.
Step 3
Season the soup with salt and pepper, then transfer it to a blender and process until smooth and velvety.
Step 4
Ladle into serving bowls and finish with a drizzle of cream before serving.
