Creamed Spinach in a Skillet

The cream in this recipe can be of any fat content, but remember: the higher the fat percentage, the higher the calorie content. You can use any cheese – hard, semi-hard, or soft, such as mozzarella. The most important thing is that it tastes good.
Preparation
Step 1
You can use either fresh or frozen spinach. I used Parmesan, finely shredded into thin flakes, but any cheese of your choice works well—Gouda, Cheddar, Lamber, or Mozzarella. First, sort and wash the spinach leaves thoroughly. Place them on paper towels and let them dry.
Step 2
In a small deep bowl, pour the cream, add flour and ground black pepper. Mix everything well and set aside.
Step 3
In a heavy-bottomed skillet with high sides, melt the butter over medium heat.
Step 4
Tear the spinach leaves into smaller pieces by hand or cut them into 2-4 parts using a knife. Add the spinach to the skillet.
Step 5
Sauté over slightly higher than medium heat for about 4-7 minutes, stirring frequently. If the spinach starts to burn, reduce the heat.

Season with salt to taste. If you have nutmeg, add it—it pairs perfectly with the other ingredients and enhances the flavor.
Step 7
Pour in the cream-flour mixture. Bring to a boil, then reduce the heat to low. Cover the skillet and simmer for 10-15 minutes.
Step 8
Sprinkle the dish with grated cheese and let it sit on the stove until the cheese melts completely.

Serve immediately while hot, either as a standalone dish or as a side to fish and other meals.
