Cream-Filled Choux Pastry Eclairs

Preparation
Step 1
First, prepare all the necessary ingredients for making delicious homemade cream-filled choux pastry eclairs.
Step 2
For the choux pastry, pour 100 ml (about 3.4 fl oz) of boiled water, 100 ml (3.4 fl oz) of milk, and 80 ml (2.7 fl oz) of vegetable oil into a saucepan. Add a pinch of salt and sugar. Place over high heat and bring to a boil.
Step 3
Add 180 g (1½ cups) of sifted all-purpose flour into the saucepan.
Step 4
Lower the heat and, stirring quickly with a spatula, mix until the dough becomes smooth and uniform.
Step 5
Transfer the dough to a mixing bowl and let it cool for a couple of minutes.
Step 6
Beat in 4-5 eggs, one at a time, mixing thoroughly after each addition until the dough becomes smooth and shiny.
Step 7
Place the dough into a piping bag fitted with a round or star nozzle.
Step 8
Line a baking sheet with parchment paper, pipe the dough into eclair shapes about 4 inches long, spacing them at least 1½ inches (4 cm) apart. Moisten your finger with water and smooth any uneven parts.
Step 9
Bake on the middle rack at 190°C (375°F) for 20 minutes, then reduce the oven to 170°C (340°F) and bake another 20 minutes. Turn off the oven and leave the eclairs inside for 15 minutes with the door closed.
Step 10
Afterward, slightly open the oven door for 5 minutes, then remove the tray and let the eclairs cool.
Step 11
For the cream: pour 350 ml (1½ cups) of heavy cream into a bowl, add 2 tablespoons of powdered sugar, and whip with a mixer until fluffy.

Fill a piping bag with the prepared cream and generously fill each eclair.

Decorate the eclairs on top with cream and dust with powdered sugar using a fine sieve.
