Crab Stick, Tomato & Cheese Salad

Quick to make, delicious, and healthy - without mayonnaise! The crab stick, tomato, and cheese salad is so light you could enjoy it daily. Perfect for dinner or breakfast, it complements any meat dish. Both an appetizer and a quick snack in one!

Preparation
Step 1
Instead of crab sticks, you can use shrimp or crab meat. I used feta cheese, but you can choose any cheese you like. If you wish, replace parsley with dill. Wash and dry vegetables and herbs in advance. Defrost crab sticks if needed.
Step 2
Slice the crab sticks into rounds.
Step 3
Cut feta or any other soft cheese into medium cubes.
Step 4
Cut tomatoes into medium cubes or quarters. You can substitute large tomatoes with small cherry tomatoes - just halve them.
Step 5
Peel the garlic and press it through a garlic press.
Step 6
Finely chop parsley (or dill, or any other herb you prefer).
Step 7
Prepare the salad dressing ingredients. I used olive oil, but any vegetable oil will do. Lemon juice can be replaced with lime juice or lemon sauce.
Step 8
In a separate bowl, combine olive oil, lemon juice, salt, and pepper. Lightly whisk with a fork or whisk until smooth.
Step 9
In a salad bowl, place sliced crab sticks, feta, tomatoes, parsley, and garlic.
Step 10
Pour the dressing over the salad and mix gently.
Step 11
Serve immediately - the salad tastes best when fresh. Enjoy!
