Crab Appetizer on Pineapple Rings

Step 1
Pineapple rings can vary in size. Small rings are easier to eat. Drain the rings from syrup and pat dry.

Boil eggs until hard, cool, peel, and dice into small cubes.

Remove the wrapper from crab sticks and dice into small cubes. You can replace or add other seafood, e.g., shrimp, squid, or lightly salted red fish.
Step 4
Dice cheese into small cubes. All filling ingredients should be roughly the same size for a better visual effect. Any tasty cheese works, from standard cheese to mozzarella.
Step 5
In a bowl, combine crab sticks, cheese, and eggs. Dress with mayonnaise and mix. Use a moderate amount so the salad doesn’t become too runny. Optionally, add chopped herbs (dill or parsley), cooked rice (2-3 tbsp), or diced cucumber for freshness.
Step 6
Wash and dry lettuce leaves. Place one leaf on top of each pineapple ring. Any lettuce works: iceberg, frillis, romaine, etc.
Step 7
Heap the crab filling on top of the lettuce leaf. The appetizer is ready to serve. If preparing ahead, assemble just before serving. Enjoy!
