Preparation
Step 1
You can use any sausages, as long as they’re tasty and good quality. You may use corn flour, or a mix of corn and wheat flour. Any fat content kefir will work. Add salt and sugar to your taste.
Step 2
Pour kefir into a bowl and add baking soda. Stir and let sit for 10 minutes — the reaction makes the batter light and airy. Then add water to the kefir. Add sugar and salt.
Step 3
Sift the flour and mix it with more baking soda. Gradually add the dry ingredients to the wet mixture, stirring. Adjust the flour amount as needed to get a thick kefir-like batter. If too runny, add more flour; if too thick, add a little water. The batter is ready. If the sausages are long, cut them in half. Insert a wooden skewer into each. Longer sticks are better for frying.
Step 4
Use a pot, deep pan, or Dutch oven with a thick bottom — this ensures even heating. Pour in vegetable oil for frying (about 2–3 inches deep). Place over medium heat and preheat the oil. Test the oil by dropping in a bit of batter — if it floats right away, the oil is ready. Dip a sausage in the batter, then place it in the oil. Hold it briefly by the stick so the batter sets and doesn’t stick to the bottom.
Step 5
Dip and fry the remaining sausages in the same way. Don’t overcrowd the pot. Fry, turning by the sticks, until golden brown. This is where long skewers come in handy!
Step 6
Once golden, remove the corn dogs from the oil and place them on a paper towel-lined plate to absorb excess oil. Repeat with the rest.
Step 7
Serve your fried corn dogs hot with ketchup or mustard. Enjoy!
