Corn, Bean, and Sausage Salad

Preparation
Step 1
If using canned corn and beans, the salad is ready in minutes. For dried beans, soak them in cold water for 24 hours or in hot water for 1-2 hours. Boil on low heat for 30-90 minutes. Test readiness by mashing one bean with a fork.
Step 2
Drain canned beans and corn, place them in a deep bowl.
Step 3
Remove the casing from the sausage and cut into thin sticks or small cubes, as preferred. Use any good-quality smoked sausage. Add to the bowl with corn and beans.
Step 4
Rinse and dry green onions. Chop and add to the salad bowl.
Step 5
Add mayonnaise (preferably homemade). You can mix in a small crushed garlic clove for extra flavor. Season with salt and pepper to taste.
Step 6
Mix thoroughly, garnish with parsley or dill, and serve.
