Cookies with Sour Cream and Margarine

Preparation
Step 1
I don’t recommend replacing margarine with butter - the vegetable fats in margarine give the dough its flaky texture. Plus, margarine is cheaper.
Step 2
Place margarine in a saucepan with a thick bottom and melt it on the lowest heat.
Step 3
Remove from heat and immediately add sugar. Stir quickly - in the warm mixture, the sugar will almost completely dissolve. Adjust sugar to taste. Don’t forget a pinch of salt to balance the flavor.
Step 4
Crack an egg into a deep bowl. Wash eggs before use, as even clean-looking shells may contain harmful bacteria. Best to use food-safe cleaners and a brush. Lightly whisk the egg.
Step 5
Add the melted margarine with sugar and the sour cream to the egg. Mix until smooth. Add baking soda and stir again.
Step 6
I used a hand whisk - no mixer is needed for this recipe.
Step 7
Begin sifting flour into the wet mixture in portions, mixing well after each addition. I stirred with a fork at this stage.
Step 8
When the dough becomes too stiff for a fork, knead by hand. The amount of flour may vary - the dough should form into a ball, not stick to your hands, yet remain soft. Wrap the dough in a bag and place in the freezer for 30 minutes so the margarine hardens, making it easier to work with.
Step 9
After chilling, cut the dough in half. Roll out one half on a floured surface to 0.2 in (0.5 cm) thickness. Keep the other half in the fridge.
Step 10
Cut cookies with a cookie cutter (or a glass). You can also cut the dough into diamond shapes.
Step 11
Line a baking sheet with parchment paper. Place cookies on it. Re-roll leftover dough and cut again. One half of the dough should fit on one baking sheet.
Step 12
Bake in a preheated oven at 400°F (200°C) for 10-15 minutes, depending on your oven. The cookies should turn lightly golden.
Step 13
Sprinkle finished cookies with powdered sugar if desired. Serve with tea, cocoa, coffee, or milk. They are especially delicious warm. Enjoy!
