Preparation
Step 1
Place the chopped cabbage, grated carrot, and finely sliced onion into a large mixing bowl.
Step 2
In a separate smaller bowl, combine the mayonnaise, lemon juice, vinegar, and grainy mustard. Season generously with salt and freshly ground black pepper, then stir until the dressing is smooth and fully blended.
Step 3
Pour the dressing over the prepared vegetables and toss everything together until evenly coated.
Step 4
Serve the coleslaw right away for a fresh crunch, or cover and refrigerate for up to 2 days to allow the flavors to develop before serving.
