Preparation
Step 1
First, prepare the ingredients according to the list. You can use kefir of any fat content. I used 3.2%.

Wash the cucumber thoroughly. If the skin is not tough, damaged, or bitter, peeling is optional. I peeled it because it was slightly tough. Cut the cucumber into small cubes.

Wash and dry the green onion. Slice it into rings. You can include the white part or just the green stems. For a milder taste, replace with green celery stems.

Finely chop dill, parsley, and cilantro. You can adjust, add, or substitute herbs to your taste. Mint, spinach, or wild garlic can also be added.

Peel and finely chop the garlic or press through a garlic press. Adjust quantity for a milder flavor or omit entirely if desired.

In a bowl, combine cucumber, herbs, and garlic.

Pour in chilled kefir. Season with salt and pepper to taste. Adjust kefir quantity for desired soup thickness. The kefir’s fat content also affects consistency.
