Coffee with Cocoa and Milk – Mocha (Mokachino)

Aromatic, delicious, and very beautiful - for gourmets! Mocha is a type of latte that, besides coffee and milk, contains chocolate in one form or another. It can be melted chocolate, cocoa, or dessert syrup. The drink is easy to prepare, and the result is sure to please.

Preparation
Step 1
The first layer of non-alcoholic mocha is usually made of melted chocolate or cocoa. I’ll use cocoa. The recipe is for 1 serving, so the amounts are clear. If making 2 portions, simply double everything.
Step 2
Pour 3 ½ tbsp (50 ml) water into a saucepan. Add cocoa and stir until smooth. Place over low heat and bring to a boil while stirring. Add 2 tbsp milk (from the total amount) and sugar to taste. Cook, stirring, until thickened. The cocoa must be denser than coffee and milk so it stays at the bottom of the glass. Remove from heat and let cool.
Step 3
In a cezve (Turkish coffee pot), add ground coffee and 6 tbsp (90 ml) water. Stir, place over low heat, and bring to a boil. Strain through a fine sieve, return to heat, and bring to a boil again.
Step 4
Meanwhile, heat the remaining milk (about 70 ml or ¼ cup + 2 tsp) in a saucepan to 140-150°F (60-65°C). It should be hot but not boiling and slightly cooler than the coffee.
Step 5
Whip cold cream with powdered sugar until stiff peaks form (it should not fall out if you turn the bowl upside down). If you have canned whipped cream, you can skip this step.
Step 6
In a clear Irish glass with a handle, pour in the cooled cocoa. Then carefully add the warmed milk. Using the back of a spoon or knife, slowly pour in the hot coffee on top. Garnish with whipped cream and optionally drizzle with chocolate syrup. Enjoy!
