Coffee banana bread

Preparation
Step 1
Dissolve the instant coffee in small amount of boiling water. Set aside until needed, let it cool.

Preheat the oven to 190C. Grease a 1 litre/1¾ pint loaf tin, or use a similar-sized round or square cake tin, ensuring all sides are well coated to prevent sticking.
Step 3
In a large mixing bowl, mash the bananas thoroughly, then add the sugar, eggs, coffee, nutmeg, and a pinch of salt. Stir until the mixture is smooth and fully combined.
Step 4
Next, incorporate the melted butter, followed by the flour and chocolate pieces, if using. Mix gently until just blended into a thick, even batter.
Step 5
Pour the batter into the prepared tin, smoothing the top with a spatula. Bake for 50 minutes, or until a skewer inserted into the centre comes out clean, with no traces of wet batter.
Step 6
Once baked, remove the cake from the oven and allow it to cool slightly in the tin. After a few minutes, turn it out onto a wire rack to cool completely. Slice and serve as is, or enjoy slightly warmed with butter or cream for an extra indulgent treat.
