Preparation
Step 1
Rinse the rice thoroughly under cold running water to remove any excess starch. Once the water runs clear, transfer the rice to a saucepan with a tight-fitting lid.
Step 2
In a separate bowl or jug, combine the coconut milk and broth, then pour the mixture over the washed rice. Stir lightly to distribute evenly.
Step 3
Cover the saucepan with the lid and place it over high heat. Bring the rice to a vigorous boil, then immediately reduce the heat to low. Keep the lid on and simmer gently for about 10 minutes, or until the liquid level matches the top of the rice.
Step 4
Once the liquid has been absorbed, turn off the heat but do not remove the lid. Allow the rice to rest, covered, for a further 10 minutes so it finishes cooking in the steam.
Step 5
After resting, use a wooden spoon or fork to gently fluff up the rice. Season with salt, sugar, and pepper to taste, and serve warm as a fragrant accompaniment to your favorite main dish.
