Coconut Cookies

Preparation
Step 1
If the eggs are large, you may need to add more shredded coconut. Adjust the sugar amount to your taste.

Beat room-temperature eggs with a mixer until fluffy, gradually adding sugar. The mixture should triple in volume, with many small bubbles on top. The sugar must be fully dissolved. If desired, add a little vanilla or vanilla sugar while beating.
Step 3
Add shredded coconut to the whipped eggs and mix thoroughly with a spoon. If the mixture is too wet, add a bit more coconut. If you don’t have extra coconut, add 1–2 tablespoons of flour.
Step 4
Let the coconut mixture rest for 5-7 minutes so the coconut absorbs excess moisture.
Step 5
With wet hands, shape 12-15 cookies in the form of cones with pointed tops.
Step 6
Place the shaped cookies on a baking sheet lined with parchment paper.
Step 7
Bake the cookies in a preheated oven at 375°F (190°C) for 10-15 minutes. Baking time may vary depending on your oven. The tops should be golden brown.
Step 8
Carefully transfer the cookies onto a wire rack and let them cool. Serve cooled coconut cookies with tea. Enjoy!
