Cocoa Cake with Kefir

A true celebration of flavor for all sweet lovers! Cocoa Cake with Kefir is so easy to make that even beginners can master it. You can speed up the process significantly by using store-bought cake layers instead of baking your own.

Preparation
Step 1
Prepare ingredients for the batter. Use high-quality wheat flour and natural unsweetened cocoa (not cocoa drink mix). Choose neutral oil. Use large eggs (3 small ones if needed). Let kefir come to room temperature. Preheat oven to 350°F (180°C).
Step 2
Beat eggs with sugar and a pinch of salt using a mixer until fluffy and the sugar is fully dissolved.
Step 3
Add oil and beat again.
Step 4
In a separate bowl, mix kefir (room temperature) with baking soda until it foams.
Step 5
Pour the kefir mixture into the eggs and mix until smooth.

Sift cocoa with vanilla (or vanilla sugar) and whisk together.

Gradually add sifted flour, mixing quickly with a whisk. The batter should be smooth and pourable. Adjust flour amount as needed for consistency.
Step 8
Pour into a 9-inch (22 cm) parchment-lined baking pan. Bake at 350°F (180°C) for 35-50 minutes. Check with a toothpick - it should come out clean.
Step 9
Cool the cake. Trim off the domed top. Slice the remaining cake horizontally into 3 layers. You may moisten them with syrup, but the layers are moist enough on their own.
Step 10
Blend the trimmed top into fine crumbs.
Step 11
Prepare the cream: butter and condensed milk should be room temperature. Use only quality condensed milk (just milk and sugar).
Step 12
Beat soft butter with vanilla until fluffy. Gradually add the condensed milk while beating until the cream is thick and stable.
Step 13
Assemble the cake by spreading cream between layers. Cover the top and sides with the remaining cream. Sprinkle with the cake crumbs.
Step 14
Chill in the refrigerator for 2-3 hours.
