Cocoa Cake in the Oven

A wonderfully fragrant baked treat for tea time with family or friends. The cocoa cake is tender, aromatic, with a light chocolate flavor and delicious coffee notes. Surprisingly easy to make – perfect even for unexpected guests.

Preparation
Step 1
Take the butter out of the fridge ahead of time to soften.
Step 2
Heat the milk until hot. Dissolve the coffee in the hot milk and let it cool to room temperature. For a stronger coffee flavor, add 3 tsp of instant coffee.

In a bowl, beat the eggs with sugar and salt using a mixer until light and fluffy.

Add the very soft butter to the egg mixture and mix on low speed.
Step 5
Sift in the flour mixed with baking powder and cocoa. Mix well. Sifting helps incorporate air, making the cake rise better.
Step 6
Pour in the milk with dissolved coffee.
Step 7
Mix with a mixer until you get a smooth, lump-free batter. The consistency should be similar to slightly thin sour cream. Preheat the oven to 350°F (180°C).
Step 8
Line the bottom of a baking pan with parchment paper and lightly oil the sides. Pour the batter into the pan and smooth the top.
Step 9
Bake in the preheated oven at 350°F (180°C) for 30–35 minutes. Check doneness with a wooden skewer - it should come out dry. Baking time may vary depending on your oven. Let the cake cool slightly before removing it from the pan.

Slice the cocoa cake into portions and serve. Enjoy!
