Classic Spanish Tortilla
Made from simple ingredients, perfect for breakfast or dinner for the whole family! Classic tortilla is one of the signature dishes of Spanish cuisine. Essentially, it is an omelet without milk, made with vegetables, and the amount of vegetables usually exceeds the number of eggs. This dish turns out more filling and nourishing than a regular omelet.

Preparation
Step 1
How do you make a classic Spanish tortilla? Prepare the ingredients. Use medium-sized potatoes and larger eggs. If your eggs are small, use more of them. Wash the vegetables well and dry them.
Step 2
Remove the seeds from the bell pepper and cut it into small cubes or strips.
Step 3
Peel the potatoes and cut them into thin rounds, or half-rounds if the potatoes are large.
Step 4
Crack the eggs into a deep bowl. Add salt and pepper, then beat until smooth. A simple fork is enough; tortilla does not need to be fluffy.
Step 5
Heat the vegetable oil in a pan over medium heat. Add the potatoes and lightly salt them.
Step 6
Mix well so that each potato slice is coated with oil.
Step 7
Cover the pan with a lid and stew the potatoes for about 15 minutes, stirring from time to time.
Step 8
Add the bell pepper and stewed potatoes to the beaten eggs.
Step 9
Mix everything gently, trying to keep the potato slices whole.
Step 10
Return the mixture to the pan and level it out. Fry over low heat for about 5 minutes, separating the edges of the tortilla from the pan with a silicone spatula.
Step 11
Then cover the pan again with a lid and cook the dish for another 2–3 minutes.
Step 12
Now you need to flip the tortilla to the other side. To do this, remove the lid and place a wide plate on top.
Step 13
Holding the plate firmly against the pan, flip the pan over so the tortilla lands on the plate.
Step 14
Pour a little vegetable oil into the pan and return the tortilla to it so it can fry on the other side. Cook it for about 5 more minutes.
Step 15
Transfer the finished tortilla to a serving dish and serve. It turns out beautifully golden, with a lovely crust. Enjoy!
