Classic Potato Salad

Simple and very tasty, made from affordable ingredients! Classic Potato Salad is prepared with celery and pickles. Hearty and nutritious - a great choice for a snack, lunch, or dinner.

Preparation
Step 1
The dressing can be made with sour cream, yogurt, or mayonnaise. Use pickled or brined cucumbers. Adjust the amount of each ingredient to your taste.
Step 2
Boil the potatoes and eggs until fully cooked, then let them cool. Peel the potatoes and shell the eggs.
Step 3
Peel the onion. For a brighter salad, red onion works well, but regular onion is also fine. Rinse celery, fresh herbs, and onion, then pat dry with paper towels.
Step 4
Dice the onion and celery into small cubes. Cut the pickles into cubes or sticks. You can also use a vegetable slicer. Place everything into a deep mixing bowl.
Step 5
Prepare the dressing: in a small bowl combine mayonnaise, mustard, sugar, ground pepper, and vinegar. Mix thoroughly and let sit until the sugar dissolves.
Step 6
Slice the potatoes into thin circles or half-circles. Chop the eggs any way you like: wedges, cubes, or half-circles similar to the potatoes. Add them into the bowl with the other ingredients.
Step 7
Stir the dressing again and pour it over the salad. Rinse, dry, and finely chop the herbs. Which herbs are best? Dill, green onion, parsley, or garlic greens work great. Add to the salad.
Step 8
Mix everything well, add salt, and taste. Adjust flavor as needed. I added a bit more vinegar. Place the finished salad in the fridge and let it chill for at least 1 hour.

Serve sprinkled with ground pepper and decorated with parsley or dill sprigs.
