Classic Okroshka on Kvass with Sausage

Step 1
How to make classic okroshka on kvass with sausage? Prepare all the ingredients from the list. What sausage is best? Use any you like: cooked sausage, semi-smoked sausage, frankfurters, or hot dogs. This recipe uses cooked sausage.
Step 2
Scrub the potatoes well with a brush to remove any dirt or sand. Boil the potatoes and eggs until done, then cool.
Step 3
Peel the potatoes and eggs. Rinse the radishes well and remove the tops and tail ends.
Step 4
Dice the potatoes and eggs into small cubes. Okroshka looks especially appetizing if all components are cut into cubes of the same size. Sometimes I use a vegetable chopper to speed things up. Place the potatoes and eggs in a deep bowl or small pot.
Step 5
Wash and pat dry the cucumbers. If the skin tastes bitter, peel it off. Dice the cucumbers and radishes and add them to the potatoes and eggs.
Step 6
Dice the sausage the same way and add it to the rest. If you prefer replacing sausage with meat, use boiled lean beef, tongue, or chicken breast. Important: the cooked meat should not be fatty, because okroshka is a cold soup and fat pieces will solidify.
Step 7
Finely chop the green onion and dill. For extra aroma, you can crush the herbs with a pestle in a mortar. Add the herbs to the bowl.

Mix everything well.

Divide the mixture into individual bowls and pour kvass over it. You can use store-bought or homemade kvass. I like slightly tangy kvass for okroshka. Add salt to taste if needed.
Step 10
Add the desired amount of sour cream and stir. Done!
