Classic Liver Stroganoff

Preparation
Step 1
How do you make classic liver Stroganoff? Prepare all the necessary ingredients. Choose fresh liver, bright pink in color, without visible damage. It can be pork liver, beef liver, or liver from any poultry. I use chicken liver. You can use sour cream of any fat content, or replace it with heavy cream or even mayonnaise, though that is less desirable. If you do not have tomato paste, you can use ketchup instead.
Step 2
Peel the onion and rinse it. To make the onion easier to peel, soak it in cold water for about 30 minutes before cooking. Then you will peel it easily. Cut the onion into cubes.
Step 3
Heat 1 tablespoon of vegetable oil in a frying pan. Since you will be frying in it, the oil must be refined so it does not burn in the pan. You can use any refined oil, from sunflower to olive oil. Add the chopped onion and fry for about 5-7 minutes, until golden.
Step 4
Reduce the heat and add the flour to the pan.

Add the tomato paste.
Step 6
Add the sour cream and stir everything vigorously so there are no lumps. The sauce will thicken quickly, so it makes sense to add a little water. The amount of water will depend on how thick the sour cream and tomato paste are, and on the quality of the flour. Bring the sauce to the consistency of thick sour cream.
Step 7
Salt the sauce to taste. You can also add pepper or other seasonings. But in the classic recipe, no extra seasonings are used.
Step 8
Stir the sauce and remove it from the heat.

Rinse the liver very well under running water. Remove the membranes and bile ducts if there are any. To reduce bitterness, you can soak the liver in milk for 1-2 hours before cooking. Cut the liver into small pieces.

In another frying pan, heat the remaining oil, add the liver, and fry it over medium heat, turning the pieces, until the liver is cooked through. The usual cooking time for liver is about 10-15 minutes, but do not overcook it.
Step 11
Add the sauce you prepared earlier to the cooked liver.
Step 12
Mix the liver with the sauce and serve. The pieces turn out tender and juicy in a flavorful sauce. Our chicken liver Stroganoff with sour cream is ready. This dish can also be served without a side dish.
