Classic Honey Cake

The most beloved, delicious, and festive cake! Classic Honey Cake is very aromatic, tender, and flavorful. The layers soak in slightly sour cream and simply melt in your mouth. And it’s easy to make.

Preparation
Step 1
Sift the flour in advance to aerate it.
Step 2
Combine honey with butter and melt together.
Step 3
Mix the eggs with sugar.
Step 4
Add the honey mixture to the eggs and place on the stove.
Step 5
If you have a nonstick pan, place directly on heat. Otherwise, use a double boiler to prevent burning. Add baking soda and stir constantly until boiling. The honey reacts with the soda and foams, gradually darkening. Add 1/3 of the flour and mix in.
Step 6
The dough is still liquid at this stage. Remove from heat and gradually mix in the remaining flour. You may need slightly more or less depending on consistency.
Step 7
The dough will be soft and slightly sticky. Cover with plastic wrap and rest for 15 minutes so the flour absorbs moisture and it stops sticking. Avoid adding extra flour.
Step 8
Divide the dough into 6-8 portions and roll each thinly on parchment. Prick with a fork. Bake in a preheated oven at 180°C (356°F) for 5-7 minutes.
Step 9
The baked layer should be a dark golden color. Cut a circle 18-22 cm while still hot.
Step 10
Bake all layers this way; save the scraps for decoration.
Step 11
For the cream, mix sour cream and powdered sugar until fluffy.
Step 12
Spread cream between layers and assemble the cake.
Step 13
Sour cream is usually liquid, so to keep the cake even and layers from sliding, place it in a cake ring. Refrigerate overnight to soak.
Step 14
Remove the ring from the soaked cake.
Step 15
Crush the remaining scraps into crumbs.
Step 16
Coat the cake with crumbs on all sides and decorate as desired. Enjoy!
