- dessert spoon - 10 ml
- tablespoon - 20 ml

Preparation
Step 1
Start making the pizza with the dough. Prepare all the necessary ingredients. Olive oil is used in the classic pizza dough recipe, but it can be replaced with any other refined vegetable oil. Use all-purpose flour. It should be sifted to remove any fine impurities and to enrich it with oxygen, so the dough rises well and turns out airy.
Step 2
Add the sugar and yeast to warm water, 37-40°C (99-104°F). Stir with a spoon until the sugar fully dissolves. If you do not have a kitchen thermometer, you can check the temperature this way: place a drop of water on the inside of your wrist. If it feels neutral - neither cold nor hot - the temperature is right.
Step 3
If the temperature is too low, the yeast will work more slowly and the preparation will take longer. If the temperature is too high, the yeast will die and the dough will not rise. Add 2 tablespoons of flour, stir, and leave for 10 minutes.
Step 4
If a fluffy foam cap appears on the surface, the yeast has activated and you can continue cooking. If that does not happen, the yeast will have to be replaced. The dough will not work with it.
Step 5
For kneading the dough, take a deep bowl in which it will be convenient to mix the dry and liquid ingredients. Put half of the flour into it. Add the salt and mix it with the flour so the dough is evenly seasoned. Make a well in the center of the flour.
Step 6
Pour the vegetable oil and the dissolved yeast mixture into the flour. Add the liquid ingredients to the dry ones, not the other way around. That way the dough will turn out best. Since flour of the same type but from different producers can behave differently, add the flour in small portions to achieve the right consistency. When it becomes hard to stir with a spoon, start kneading it with your hands. Knead the dough thoroughly.
Step 7
It should turn out soft and tender, but not stick to your hands. Grease the bottom and sides of the bowl with vegetable oil so the dough does not stick to the bowl. Knead the finished dough briefly again with oiled hands. Cover the bowl with a napkin or towel so the dough does not dry out and rises well. Leave it in a warm place for about 1 to 1 1/2 hours. During this time, the dough should increase several times in volume. About 30 minutes before baking, preheat the oven to 200°C (390°F).
Step 8
Choose any cheese that melts well. Use whatever sausage you like best. Red onion tastes better here - it does not have such a sharp onion aroma and has a sweeter flavor.
Step 9
Cut the sausage into thin strips - this is the standard cut for homemade pizza. Grate the cheese on a coarse grater.
Step 10
Wash and dry the tomato, remove the stem, and cut it into thin slices. Cut the olives into rings - it is better to remove any stem ends so the pizza looks neater.
Step 11
Peel and wash the onion and cut it into half-rings. Heat a frying pan with oil. Sauté the onion in it for 3 minutes, stirring constantly. It should not become too soft, only slightly softened. Cool it completely.
Step 12
Flatten the dough with your hands into a round sheet right on the parchment paper. Leave the edges thicker so a rim forms. From this amount of dough, you can make one large pizza or two small ones. I will make two pizzas about 20 cm, about 8 inches, in diameter each.
Step 13
Spread half of the cheese evenly over the dough, then spread the onion evenly on top. Add the sliced sausage as the next layer, then the tomato on top. Sprinkle everything with the remaining cheese and distribute the olives evenly.
Step 14
Bake for 15-20 minutes on the middle rack at 200°C (390°F) using top-and-bottom heat. The cooking time depends on the characteristics of your oven, so check for doneness. In the finished pizza, the dough will rise and brown slightly. When pressed gently with the palm of your hand, the dough should not wobble loosely.
Step 15
Serve the homemade pizza hot, straight from the oven, cut into triangles. Decorate with fresh herbs such as basil or arugula. It goes very well with tomato sauce or garlic sauce. An ideal drink is cold lemonade, beer, or a light wine. This classic pizza with sausage can also be taken along to a picnic. Enjoy your meal!
