Classic Beet, Carrot, and Raisin Salad

Preparation
Step 1
Choose medium-sized vegetables (carrots and beets) so they weigh about the same. Use natural cheese without vegetable fats. Raisins should be seedless, nuts pre-shelled. Mayonnaise can be homemade.
Step 2
Wash and peel carrots, then grate on a medium grater. Medium grating is best: large gives a rough texture, small makes it too mushy. If carrots are very juicy, squeeze out some juice. Transfer to a bowl.
Step 3
Grate cheese on the same medium grater. Put into a separate bowl.
Step 4
Beets should be boiled. To cook: wash beets well, place in a pot, cover with cold water. Cook on medium heat. After boiling, reduce heat and simmer for 1-1.5 hours depending on size. Test doneness with a knife - it should pierce easily. Cool, peel, and grate on a medium grater.
Step 5
Prepare raisins: wash well, cover with hot water, and leave for 10-15 minutes to soften.

Drain water, pat dry with paper towels.
Step 7
Add raisins to the carrot bowl. Mix in 2 tbsp mayonnaise.
Step 8
Peel garlic, press it into the cheese bowl. Add 2 tbsp mayonnaise, mix well.
Step 9
Mix 2 tbsp mayonnaise into the beets. Adjust mayonnaise depending on how juicy your ingredients are.
Step 10
Assemble the salad in layers - use a salad bowl or plate with a ring. First layer: carrots with raisins. Press down with a spoon.
Step 11
Next layer: cheese. Press it down as well.
Step 12
Last layer: beets. Some recipes add nuts into the beet layer; I just put them on top. Adjust to your taste.

Chop nuts finely. You can lightly toast them in a dry pan for extra aroma.
Step 14
Sprinkle chopped nuts on top of the salad. Remove the ring and serve. The salad doesn’t need to rest - since layers are mixed with mayonnaise, they are already moist. Enjoy!
