Step 1
How do you bake beautiful homemade cinnamon rolls with sugar and cinnamon in the oven? First, prepare the ingredients for the dough. Take the butter out of the refrigerator in advance so it has time to soften. The eggs should also be at room temperature.
Step 2
Warm the milk to about 37-38°C (98-100°F). It should feel pleasantly warm, but not hot, otherwise the yeast will die. Add 1 tablespoon of sugar and the yeast to the milk. Mix everything, cover with a towel, and leave for 20 minutes. During this time, the yeast should activate and form a foamy cap. If that does not happen, you need different yeast, otherwise the dough will not rise.
Step 3
While the yeast is activating, beat the softened butter with the remaining sugar using a mixer.
Step 4
Add the eggs and beat everything until smooth.
Step 5
Pour the egg mixture into the yeast mixture and gently stir with a spatula.
Step 6
Sift the flour with the salt into the mixture. Do not add all the flour at once, use about 2/3 of the total amount first.
Step 7
Knead the dough. Add the remaining flour as needed. Do not overdo it, the dough should stay soft. Too much flour makes the baked goods tough. You may need a little less or a little more flour, so judge by the consistency. The dough will become smooth and even rather quickly. Shape it into a ball, cover it with a towel, and leave it in a warm place for 1–1.5 hours to rise.

How do you make the filling for cinnamon rolls? Very easily. Take soft butter. Choose a natural, good-quality product without vegetable fats. I used brown sugar because it gives the pastry a caramel flavor, but regular white sugar will also work.
Step 9
Mix the sugar and cinnamon in a small bowl. The filling is ready.
Step 10
By the end of the rising time, the dough will have roughly doubled in size.

How do you shape the rolls beautifully? Dust the work surface with flour and place the dough on it. Spread it into a square with your hands. It is very pliable, so you will not need a rolling pin. Then fold the square like an envelope: first one side toward the center, then cover it with the opposite side.

Fold the other two sides the same way.

Turn the prepared dough seam side down and cover it with a bowl. Let it rest for about 15 minutes.

Then roll the dough into a rectangle about 1 cm (about 3/8 inch) thick.

Spread the dough evenly with soft butter.

Sprinkle the dough with an even layer of cinnamon sugar.

Roll the dough into a tight log. Mark the lines where you will cut it. The easiest way to cut the log is with dental floss. It will not squash the dough. I got 12 pieces.

Place the pieces on a baking tray lined with baking paper. Be sure to leave space between them. Cover the tray with a towel and leave for 1 hour.
Step 19
After an hour, the yeast cinnamon rolls will have grown in size. Put them into an oven preheated to 190°C (375°F). Bake the rolls for about 25 minutes. The time is approximate, so rely on your oven.

How do you make the frosting for the cinnamon rolls? Take the butter out of the refrigerator in advance so it reaches room temperature.
Step 21
Mix the soft butter, the cheese, and the powdered sugar until smooth. It is convenient to do this with a whisk. The frosting is ready.

Take the finished rolls out of the oven.
