Cinnamon buns

Preparation
Step 1
In a small saucepan, heat the butter, milk, and salt until the butter melts, then allow the mixture to cool until lukewarm. In a large bowl, combine both flours, yeast, cardamom, and sugar. Make a well in the center, add the eggs, and pour in the milk mixture. Stir together to form a sticky dough, using your hands once it thickens.
Step 2
Lightly oil a work surface with a teaspoon of olive oil and turn the dough out onto it. Knead vigorously for 5-8 minutes, using a plastic scraper as needed to lift the dough. Avoid adding flour - the dough should become smooth, elastic, and less sticky as you knead. Shape it into a ball, place it in a greased bowl, cover with a clean tea towel, and let it prove in a warm place for about an hour, or until doubled in size.
Step 3
For the filling and topping, mix the softened butter with half the sugar and 1 tablespoon of cinnamon until well combined. In a separate bowl, mix the remaining sugar and cinnamon and set aside.
Step 4
When the dough has risen, turn it out onto a floured surface and roll it into a 36x24cm (14x9½in) rectangle. Spread the cinnamon-butter mixture evenly over the surface, then roll the dough tightly from the long edge into a cylinder. Slice into 12 equal pieces.
Step 5
Arrange each slice in a flattened paper cupcake case on a baking tray, or in a greased muffin tin for taller buns. Cover with a clean tea towel and leave to rise again for 30-45 minutes, or until puffy and well risen.
Step 6
Preheat the oven to 200C. Brush the buns with beaten egg and generously sprinkle with the reserved cinnamon sugar. Bake for 12 minutes, or until dark golden brown. Serve warm, ideally with a steaming cup of coffee.
